Gaia is a quality producer from Greece with production in Santorini and Nemea. After harvesting, the must has been cold macerated for 12 hours before spontaneous fermentation, which preserves the fresh fruit aromas in the wine. Assyrtiko is a grape variety known for its acidity, texture, and minerality. It has aromas of yellow apples, ripe lemon, mature fruit, flowers, herbs, and minerals, with hints of vanilla. The taste features notes of apples, lemon, ripe fruit, spices, butter, and herbs. It is an excellent wine with a mature fruity character while maintaining a fresh tone. A good alternative to Chardonnay, it pairs well with appetizers and seafood. If you're looking to buy a wine for the summer, this is the one.
